Carrot Cake Recipe!

Howdy!

Yesterday and today we made carrot cakes, because 'tis the holiday season.  This year we made only 80-some (that is to say, we did the recipe X24).  It's hard to say in any standard way from year to year just how many we make, because the sizes vary.  Some are large-sized for holiday parties, and some are "personal indulgence" size, for our friends (...ok, we won't name names) who confess to us that they squirrel away their cake and then when they are alone, and the time is juuuuuuust right, they get a fork and carrot cake their way to bliss.

I wish I could make a yummy treat for each of my 35,000 Zaadzster friends, but the next best thing is to share the recipe.  Are you ready?  

CARROT CAKE

2 CUPS FLOUR

2 CUPS SUGAR

1 1/2 CUPS VEG OIL

2 TEA SPOONS BAKING SODA

2 TEA SPOONS BAKING POWDER

1 TEA SPOON SALT

4 EGGS

2 TEA SPOONS OF CINNAMON

3 CUPS GRATED CARROTS PACKED FIRMLY--VERY FIRMLY

(about 1 & 1/4lb of carrots, do not grate until you are ready to mix in)


MIX EGGS, OIL AND SUGAR MIX UNTIL SMOOTH

MIX FLOUR, BAKING POWDER, BAKING SODA, SALT, CINNAMON MIX GOOD "sift"


ADD BOTH MIXTURES TOGETHER, A LITTLE FLOUR AT A TIME TO MIXTURE  OF  EGG/OIL/SUGAR


ADD CARROTS-GRATE JUST BEFORE YOU ARE READY TO PUT CARROTS IN- PACK VERY FIRM FOR THE 3 CUPS (PLUS EXTRA)


ADD 2 1/2 CUPS WALNUTS CHOPPED, 10 OZS PACKAGE--1/4 CUP FOR TOP OF CAKE. ABOUT 10 OZ MAKES ABOUT 3 CUPS


ADD 2 1/4 CUPS OF RAISINS  1/4 CUP FOR TOP OF CAKE BUY 2 1/2 CUP BOX


COOK AT 325°F FOR ABOUT 45MIN ++  TEST CENTER WITH FORK ETC...

UNTIL DONE  "DEPENDS ON OVEN"


TOPPING

1 BOX CREAM CHEESE

1 TEA SPOON OF LEMON

1 TEA SPOON OF VANILLA

1/2 STICK BUTTER

1 BOX OF POWDER SUGAR
Sprinkle the 1/4 cup nuts and 1/4 raisins you reserved over the top of the frosted cakes

This recipe will seem like it's "too liquid" or "not enough flour" when you make it, but it bakes up just fine.  It has a whole lot more carrots than the average carrot cake recipe, which, in comparison, is really a spice cake with a carrot added.  This is carrot cake!  The recipe is from Mike's mom, but we don't know where she found it.  The closest thing we ever found to it was in an Amish cookbook.
